Jacques Lassaigne Clos Sainte-Sophie is an organic and biodynamic brut nature sparkling wine made with the Chardonnay variety by Jacques Lassaigne in the AOC Champagne, in Champagne (France). 
 
Jacques Lassaigne is a family winery that Emmanuel Lassaigne took over in 1999. It lies on a 4.5 hectare estate on the limestone hill of Montgueux, one of the great Champagne terroirs. Lassaigne is a biodynamic winegrower who knows how to express the full typicity of the terroir and his wines are fine, elegant and precise. 
 
Jacques Lassaigne Clos Sainte-Sophie is a cuvée made from old vines aged over 75 years old located on an exceptional hill nicknamed the Montrachet de Champagne. They are cultivated using biodynamic principles and chemical products are prohibited. When the grapes reach optimum ripeness, they are harvested by hand.
 
Jacques Lassaigne Clos Sainte-Sophie is vinified in the most natural way. The pressed grapes ferment spontaneously with native yeasts and are aged in oak barrels that have been used once or twice. The wine then undergoes a second fermentation in the bottle for 5 years. Finally it is disgorged without adding dosage.
 
Jacques Lassaigne Clos Sainte-Sophie is a balanced, rich and mineral Blanc de Blanc champagne. A real caress with a strong personality.
