Jacques Lassaigne Le Cotet Blanc de Blancs Extra Brut is an organic champagne made by Jacques Lassaigne with the Chardonnay variety in the A.O.C. Champagne wine region (France).

Jacques Lassaigne is a small grand maison with a highly prized Montgueux terroir, a hill with outstanding geological conditions for making authentic champagnes. Despite this winery not being labelled as eco, bio or natural, its founder, Emmanuel Lassaigne enjoys a great reputation among natural producers.

Jacques Lassaigne Le Cotet Blanc de Blancs Extra Brut comes from a small vineyard in Montgueux, planted on a calcareous hill. No pesticides, fertilisers or synthetic products are used. Instead, the presence of grass between the vineyards reduces the nitrogen in the soils. The yield is limited to 60 hl/ha and the harvest is manual.

In the winery, the Jacques Lassaigne Le Cotet Blanc de Blancs Extra Brut grapes are gently pressed and the resulting must is fermented in a stainless steel tank. The second fermentation takes place in the bottle, stacked for 24 months. Finally, assemblage takes place with 5% champagne from previous years. Disgorging is manual and no sulphur is added.
