About I Custodi delle Vigne dell'Etna Aedes

The name “I Custodi delle Vigne dell'Etna” which is Italian for “The guardians of the Etna vineyards”, and was given to a wine project that is in constant development, at the foot of the Etna volcano, in Sicily (Italy). Driven by Salvo Foti, the winemaker responsible for reviving this ancient association, this winery takes care of the land, cultivating the historic vines in an artisan way, without chemicals and respecting the environment. The result is a range of red, white and rosé wines, full of balance, fruit and vitality.

One of their creations, I Custodi delle Vigne dell'Etna Aedes is a white wine from old Carricante, Minella and Grecanico vines grown on the north side of Etna. The vineyards are about 40 years old, planted on sandy volcanic soils, rich in minerals and at an altitude of between 850 and 1,200 metres above sea level. Organic agriculture is used and the ancient stone terraces encourage the drainage of rainwater, ensuring good ventilation, even in the hot summers. Harvesting is carried out strictly by hand when the grapes reach optimum ripeness in late September or early October and, once they reach the winery, the grapes are destemmed and gently pressed. The resulting must begins fermentation with native yeasts in stainless steel tanks at a temperature of 20°C and remains there for 6 months for final refining.

The result is I Custodi delle Vigne dell'Etna Aedes, a white wine that is part of the DOC Etna Bianco and has authentic Etna character. A coupage that radiates tradition and volcanic minerality.

I Custodi delle Vigne dell'Etna Aedes 2022 is a floral white wine. On the nose, it reveals flowers, broom, and citrus fruits, imparting a refreshing sensation. On the palate, it is light and lively, with balanced acidity that makes it very enjoyable. A versatile white wine with a subtle mineral touch.

I Custodi delle Vigne dell'Etna Aedes 2020 is a defined white wine with aromas of white fruit, notes of wild herbs and hints of aniseed. On the palate it is dry, fresh and very mineral. A gratifying, easy drinking wine with great versatility and a very elegant almond finish.
