The wines originating from the slopes of this volcano are quite extraordinary, unparalleled in the world, bearing witness to a tradition that is preserved over time and passed down through generations. Today, the local vintners organize themselves as custodians of an ever-changing landscape, perpetually renewed by various eruptions and lava flows. This results in a challenging climate for vine cultivation—with extreme temperatures (both cold and hot) and arid, volcanic soils—where the vines must struggle to survive, yielding a small quantity of fruit, but of exceptional quality.

In the case of I Custodi delle Vigne dell'Etna Ante, the vines are grown in the Contrada Puntalazzo vineyard, in the city of Mascali, situated on the eastern flank of Etna. Here, the vines (approximately 10 years old) are planted at an altitude of 750 meters, trained in the traditional 'alberello' (little tree) system. This method of vine training is emblematic of the region, demanding considerable labor and extensive knowledge of pruning techniques. Mechanized work is quite rare in the area, hence all tasks (including the harvest) are performed manually.

Following this, the bunches are transported in shallow crates. Once there, the clusters of I Custodi delle Vigne dell'Etna Ante are gently crushed. The resulting must is then transferred to stainless steel tanks, where it undergoes fermentation at around 20°C. Here, in the same tank, it will age for 12 months until the time comes for bottling. Finally, I Custodi delle Vigne dell'Etna Ante will spend at least 6 months stored in the bottle, awaiting the perfect moment to be unveiled to the public.
