Casajou La Caldereta 2021 is a straw-yellow sparkling wine distinguished by its fine bubbles and gradual evolution. About Casajou La Caldereta

You've likely heard the story of Apple's origins more than once, where Steve Jobs, Steve Wozniak, and Ronald Wayne established the company in 1976 in the garage of Jobs' parents' house in Los Altos, California. It was there that they conceived the idea of creating a personal computer. Although the company rapidly expanded and relocated to a much larger and superior facility, the truth is that the garage in Los Altos remains an iconic site, symbolizing the modest beginnings of what would become one of the world's most colossal and successful corporations. Under a similar ethos of advancing an idea using one's own means, Laia Esmel and Jaume Vilaseca embarked on their venture Casajou in 2020 on the ground floor of their own home. A micro-winery located in Sant Jaume Sesoliveres (Barcelona), where Laia herself states, "We aim to humanize wine, understanding it as it was perceived seventy years ago, yet equipped with current knowledge and resources."

Driven by the desire to craft emotionally resonant sparkling wines from vineyards, they created Casajou La Caldereta, a sparkling wine produced using traditional methods from a 60-year-old sloped vineyard in Sant Sadurní d’Anoia. Xarel·lo and Macabeo are interplanted on clayey-calcareous soils, cultivated biodynamically, and harvested by hand. In the winery, the two varieties co-ferment in stainless steel tanks with indigenous yeasts and undergo several hours of maceration with the skins to enhance the wine's aromas and structure. Subsequently, the base wine undergoes a second fermentation in the bottle and rests on its lees until disgorgement.

With “La Caldereta” being the first vineyard to kickstart the project, Casajou La Caldereta is a sparkling wine that unveils the profound affection this couple holds for the vineyard. It marks the beginning of a micro-project that, with limited resources, grows vast in enthusiasm and passion—essential ingredients for the success of any enterprise.

Casajou La Caldereta 2020 is an effervescent sparkling wine characterized by its delicate, fine bubbles, creamy texture, and unhurried effervescence. The bouquet is rich in fruity scents with an emphasis on white fruit, complemented by floral undertones and hints of Mediterranean spices. On the palate, it presents a refreshing, subtle elegance and a harmoniously balanced acidity. A limited release of just 5,000 bottles.
