About Casajou Els Talls

Although still in the minority, those winemakers daring to market and endorse their own harvests are on the rise, with recent times witnessing the emergence of small wineries. These enterprises, spearheaded by young entrepreneurs, serve as a catalyst for innovation within their regions. The "vigneron" wines are increasingly gaining social acclaim in their native lands for their role in sustaining rural populations, preserving agricultural traditions, and reviving nearly forgotten grape varieties and styles. In the case of Laia Esmel and Jaume Vilaseca, they own a micro-winery, Casajou, established in 2020 on the ground floor of their home in Sant Jaume Sesoliveres, a quaint rural village near Sant Sadurní d’Anoia (Barcelona). Here, they craft sparkling wines from vineyards that stir their passion, adhering to time-honored methods.

From two distinct vineyards, "La Teixonera" with its clay soils and "La Caldereta" with chalky soils, comes Casajou Els Talls. A sparkling wine made from the varieties xarel·lo, garnacha, and macabeo, grown following biodynamic principles and hand-harvested at the peak of ripeness. In the winery, the wines are vinified using the traditional method. Initially, a base wine is produced by fermenting the three varieties in stainless steel tanks at controlled temperatures with indigenous yeasts, followed by a second fermentation in the bottle on its own lees for 12 months.

Thus, thanks to the fruity contribution of the clay soils and the purer tension of the chalky soils, Casajou Els Talls is a sparkling wine that captures the essence of the landscape. These vineyards, reclaimed from oblivion, elevate the work of these two distinguished vignerons.
