Dubbed the Wizard of Bierzo, Raúl Pérez is one of those choices that never disappoints. A safe bet that ensures you'll triumph in any situation. Who would dare to criticize this mencía from the D.O. Bierzo? Who would disdain this type of craftsmanship? No one will speak ill of this wine, born in Valtuille de Abajo, within El Rapolao, the renowned and celebrated vineyard (spanning just about 1.5 hectares), planted between 1920 and 1980. A staggering 60 years. Without a doubt, it's a gem that Raúl Pérez knows how to polish and enhance. No one else understands how these vines interact with the sandy and calcareous soils. No one else grasps how the continental climate with Atlantic influence affects them. No one else knows exactly what they need at each moment. It's true that Raúl Pérez has viticulture in his blood (it must be said), but his relationship with wine was a late-blooming love (starting around his 19th year) and happened by chance (he had no intention of pursuing this path), yet it has evolved over time, growing and refining.
Ultreia El Rapolao is harvested by hand and taken to the winery where it ferments in oak vats, spontaneously from indigenous yeasts and with some stems. In this phase, Raúl Pérez merely acts as an observer, intervening in the winemaking process only when the wine requires and necessitates it. This is chiefly due to the winemaker's approach, utterly respectful both in the vineyard and in the winery, where the aim is to interfere as little as possible. Finally, Ultreia El Rapolao will undergo aging for approximately one year in thousand-liter foudres that had previously been used for white wine production.
