About Yllera Chardonnay

The practice of night harvesting has become an essential technique in the world of wine, particularly in warm regions or in those where achieving grape quality excellence is paramount. This method involves harvesting the clusters during the night or at dawn, taking advantage of the cooler temperatures to ensure that the grapes arrive at the winery in optimal condition, preserving their aromas, freshness, and natural properties. In the D.O. Rueda (Castilla y León), this technique is especially prevalent, given its importance in the production of fresh and aromatic white wines. A notable example is Grupo Yllera, a winery established in 1970 that has made night harvesting not just a routine practice but a true emblem of its identity. So committed are they to this technique that they have launched a wine collection under the name "Vendimia Nocturna," reflecting their fidelity to this method and achieving a more precise expression of the terroir's characteristics.

Thus, Jesús and Pepe Yllera, the fifth generation of winemakers, together with head oenologist Montxo Martínez, present Yllera Chardonnay, a single-varietal Chardonnay from 30-year-old vines cultivated traditionally. The harvest is carried out at night by machine and immediately transported to the winery to preserve the grape's freshness. There, the finest fruit is selected and destemmed, then gently pressed in a pneumatic membrane press. Afterwards, the free-run juice undergoes cold maceration with the skins and is fermented in stainless steel tanks at a controlled temperature of 17°C. Finally, a static settling is performed, and the wine is clarified before bottling.

Yllera Chardonnay is the result of an approach that combines innovation with respect for winemaking traditions, a proposition that embodies the essence of night harvesting and its commitment to excellence. An elegant and fresh wine that connects the legacy of a winemaking family, demonstrating how tradition and modernity can coexist in every glass.

On the nose, it is distinguished by its freshness and aromas of tropical fruits, such as mango and passion fruit, accompanied by subtle herbal and mineral notes. On the palate, it appears rounded and fruity, with an elegance that renders it fleshy and luscious. Its acidity is well-integrated, making it an expressive, expansive, and flavoursome wine, perfect for any occasion.
