About William Fèvre Chablis 1er Cru Montée de Tonnerre

William Fèvre has always had a strong reputation as an advocate for terroirs of historic renown. According to his philosophy, each soil has its own identity and authenticity that is passed on to the wines, which is noticeable in each bottle or glass. Among the 78 hectares that Fèvre works in Chablis (in the north of France, very close to Champagne) there are small plots, known as climats, which are also historic. Specifically, within his 15.9 hectares classified as Premier Cru is the Montée de Tonnerre, a hill that takes its name from the Roman road connecting Tonnerre to Auxerre. However, in terms of winemaking, this enclave is known for its climatic conditions, thanks to which high quality wines are produced, like William Fèvre Chablis 1er Cru Montée de Tonnerre.

William Fèvre Chablis 1er Cru Montée de Tonnerre is a white wine made from Chardonnay grown on this mountain (located in the east of the denomination). In this west-facing site (where the sun shines in the afternoon and is sheltered from the east wind), the grapes ripen easily in shallow soils covered with marly limestone (known as kimmeridge) and streaks of blue clay.

The grapes are meticulously cared for at Domaine William Fèvre, where all winery processes are carried out by gravity, avoiding oxidation of the grape pulp. Following the manual harvest, the clusters are gently pressed and transferred to a tank where they are racked. Once cleaned, half of the William Fèvre Chablis 1er Cru Montée de Tonnerre batch undergoes both alcoholic and malolactic fermentation naturally and spontaneously in French oak barrels (averaging 6 years). The rest does so in stainless steel tanks. Finally, William Fèvre Chablis 1er Cru Montée de Tonnerre is aged for 13 to 14 months (5-6 months on fine lees) in French oak barrels.

2018

William Fèvre Chablis 1er Cru Montée de Tonnerre 2018 is a very fine, defined white. The nose is firm and mineral, revealing aromas of lemon, bread, crisp green apple, white flowers, stones and oysters. The palate is satiny and incisive, medium-bodied, tense and dynamic. Acidic and spicy. Long and savoury finish.
