Tokaji Oremus Aszú 5 Puttonyos is a sweet wine made from the Furmint, Sárgamuskotály, Harslevelü and Zeta varieties in the Tokai denomination, in Tokaj-Hegyalja by the Oremus winery.
In 1993 the Álvarez family, owner of the prestigious Vega Sicilia winery, decided to get down to work to recover some legendary Hungarian wines which were made hundreds of years ago. This is how he founded Tokaj-Oremus Viñedos y Bodegas and, maintaining the guidelines of long ago, he created sweet wines with spectacular noble berries. Wines which are considered to be the best in the world.
Tokaji Oremus Aszú 5 Puttonyos comes from vineyards listed as World Heritage by UNESCO. Vines located 200 meters above sea level and planted on volcanic soils which are carefully cultivated to extract a noble berry, aszú or affected by botrytis. It’s an elaborate process of nature itself, which requires very specific weather conditions and only occurs in good vintages. The yield is minimal and the harvest is late and carried out manually with careful selection in the vineyard itself.
The winery follows the same processes as 400 years ago for the production of Tokaji Oremus Aszú 5 Puttonyos. First, 3 puttonyos or 25-kilo baskets of grapes affected by botrytis are added to the must which fits in a 136-liter Hungarian oak barrel ("de Gonc"). Two days later it’s gently pressed and a slow fermentation begins which can last up to two months. Then it’s placed in a wooden barrel with drops of Aszú berry essence and remains there for about 2 years. Finally, it rests another year in the bottle.
Taking into account that the number of puttonyos indicates the sweetness of this noble wine, Tokaji Oremus Aszú 5 Puttonyos is considered to be the intermediate of the majestic Tokaji range. A sweet and noble free run wine worthy of admiration.
