About Testament The Dalmatian Dog Babic

This blend has always been found among royalty and firefighters. Now, the Dalmatian can also be found at the Testament winery as an image on the bottles of Testament The Dalmatian Dog Babić, a red wine produced by this Croatian company. 
 
This breed is from there, specifically from the Dalmatia area, where Testament is based. There is nothing more typical of the area that they could use to present their wine to the world. It is also made with Babić, the area’s native variety that is organically cultivated in the 47 hectares planted near Jadrtovac, a town very close to Šibenik. To make Testament The Dalmatian Dog Babić, the grapes come directly from the UNESCO-protected Bucavac vineyard. These grapes produce elegant, dark, full-bodied wines with great aging potential. In part, these characteristics are due to karsts, the limestone that forms the soil of this region. Its light colour is essential for grapes to ripen, because it reflects the sun’s rays (which directly affect the grapes). 
 
So, once the Babić has reached optimum ripeness, the bunches are harvested by hand (mid-September) and taken straight to the winery. This is where they are processed and spend 8 days in contact with the skins. Testament The Dalmatian Dog Babić ferments in stainless steel tanks and also undergoes spontaneous malolactic fermentation. Once finished, this red wine is aged in two phases: the first in stainless steel tanks and the second in barrels, where it spends a short time before bottling. 
 
Croatian winemakers are undoubtedly making up for lost time, trying out new ideas and methods alongside the area’s old and classic productions. For the moment, Croatian wine is a great unknown...
