About Sigalas Santorini Assyrtiko

Close your eyes and envision the whitewashed houses of Santorini, the blue domes glistening under the sun, and the Aegean breeze caressing your face. Amidst sun-drenched vineyards lies a white gem that encapsulates the volcanic essence of the island: Sigalas Santorini Assyrtiko. Its story is marked by the passion of Paris Sigalas, a mathematician and winemaker, who transformed the family tradition into an international benchmark, blending innovation with respect for the ancestral heritage of Santorini viticulture.

Domaine Sigalas stands proudly on the plains of Oia (Santorini, Greece), surrounded by 40 hectares of sustainably cultivated vineyards, where the old Assyrtiko vines, some over 60 years old, yield exceptional fruit. Each cluster is handpicked, gently pressed, and fermented in temperature-controlled stainless steel tanks, then left to rest on its lees for four months, with periodic bâtonnage, imparting texture and complexity without losing freshness or vivacity.

The result is a dry, intense, and mineral white wine, with citrus notes, hints of green apple and white flowers that evoke the sea breeze and volcanic soils of the island. Its vibrant acidity and persistent finish make it an ideal companion for pairing with fresh fish, seafood, or a platter of soft cheeses, or simply to enjoy while imagining watching a sunset over the white houses and blue domes of Santorini.
