About SantYuste Paraje Vayuste

SantYuste Paraje Vayuste is a white wine produced by Esmeralda García in Santiuste de San Juan Bautista (Segovia), V.T. Castilla y León.

After finishing her studies and working in different wineries, Esmeralda García returned to her hometown, Santiuste de San Juan Bautista, to make her wines from old family vineyards located in this small municipality, in the heart of D.O. Rueda.

Esmeralda García has just under 5 hectares of pre-phylloxera vineyards, aged between 140 and 210 years old, to make her range of natural wines, intimate and free, which reflect all the character and landscape of this area.

SantYuste Paraje Vayuste is a white wine made with Verdejo from vineyards that are between 140 and 200 years old, located in the area of Vayuste at 800 metres of altitude, planted on sandy soils with sodium compounds.

The harvest is performed by hand. Once in the winery, the grapes go through a gentle skin-contact maceration for a few hours. After this, they are gently pressed and the resulting must is fermented in clay jars (tinajas) with native yeasts. Once the fermentation has finished, they remain in these jars for 6 months with their fine lees. It is bottled without clarifying nor filtering and with no added sulphites.

2017 SantYuste Paraje Vayuste 2017 is a fresh, juicy and fruity white wine. Due to its vinification in earthenware jars, this vintage displays a very marked fruity character. On the palate it is sweet, with a certain fullness and a fresh and lingering finish.
