About Raimat Lo Fred de Ponent

Lo Fred de Ponent is a single-variety Xarel·lo sparkling wine made by the Raimat winery in the DO Cava in Catalonia.

Lo Fred de Ponent is made using grapes from 25 year old vines that grow in heavy but shallow soils with a predominantly silty-loam texture.

The grapes are harvested at dawn in order to maintain their integrity until they reach the winery, where they are gently pressed and then fermented in stainless steel tanks. Malolactic fermentation happens in the same place and the base wine is ready.

This Reserva cava is aged on its lees for 15 months and, thanks to the characteristics and complexity of the Xarel·lo variety, it is predicted to have a vibrant life for another three or four years.
