About Pol Roger Pure
Champagne Pol Roger is a winery with 160 years of history that has managed to maintain a great reputation among the main champagne brands. For five generations the descendants of the founder have managed to remain faithful to the style of producing high quality wines that the winery has sought from the outset.
The Champagne Pol Roger winery has 92 hectares of its own vineyards. Specifically, the Pol Roger Pure Extra Brut vineyards are located in the Reims Mountain, the Marne Valley and the Epernay area.
The grapes for Pol Roger Pure Extra Brut are pressed just when they reach the cellar, and the must is cooled to around 6 ºC for 24 hours to eliminate impurities by decanting and obtain clean aromas in fermentation. Fermentation is carried out at a low temperature of 18 ºC in stainless steel tanks. Varieties and plots are vinified separately and then the wines go on to undergo malolactic fermentation to lower the acidity and greenness of the wine a little and give it a more creamy and lactic nature. After malolactic fermentation, the coupage is performed.
The second fermentation and ageing in stacks for Pol Roger Pure Extra Brut take place in underground cellars located 33 metres below ground level. The bottles are in stacks for 48 months until the disgorgement, in order to integrate the bubble with the wine and endow it with creaminess and body. In addition, each bottle is given a manual stirring before disgorging and the liqueur d’expedition dosage . The stirring helps to enable the fine lees to be extracted easily in the disgorgement, and the liqueur d’expedition will give it aromatic and gustatory touches peculiar to the estate.
Pol Roger Pure Extra Brut is a champagne aged on lees for at least four years, with no added sugars, and that combines white and red varieties in a fresh and structured way.
