About Pelissero Moscato d'Asti
For decades the Pelissero family has been dedicated to cultivating vineyards in the Langhe area of northern Italy, in Piedmont. Today Giorgio is at the helm of this family business where he has managed to introduce technology and place this winery (located in the town of Treiso) at the forefront of the avant-garde way of doing things. Thanks to this, the area’s typical wines like those of the D.O.C.G. Moscato d'Asti have managed to find their way onto the menu of some of the best restaurants in the world. When it comes to Pelissero, this tradition is maintained with their Pelissero Moscato d'Asti.
The Moscato d'Asti wine is made using a winemaking process that is typical of this area of northern Italy. The uniqueness of these bottles lies in the partial fermentation of the must made from the Muscatel grape. This means that the final result is a sweet wine, with a significant amount of residual sugar (which has been left by the yeasts and has not been converted into ethyl alcohol). Up to this point, all the processes are carried out very quickly and at a low temperature to avoid oxidation and loss of aromas (one of the characteristics of Moscato d'Asti).
That means not much time passes between harvesting (which is manual in 20 kg boxes), crushing, pressing and the first night’s racking. Following fermentation, Pelissero Moscato d'Asti is bottled under pressure to guarantee quality. The Peliserro grapes come from the Munfrina vineyard in the Ferrere subzone (Treiso), where the old vines (planted between 1981 and 1988) grow facing south-southwest. The soils, with a medium texture, lie at an altitude between 300 and 400 metres.
