About Nicolas Carmarans Fer de Sang

When Nicolas Carmarans boldly decided to open a natural wine shop in the heart of Paris in 1994, little did he know that a few years later he would become a genuine vigneron. The concept of minimal intervention captivated him so much that he left the city to create his own natural wines. As he himself says, he dedicated himself to reconstructing landscapes in his homeland, in Aveyron, in Occitania, southern France. His first vineyard, "Le Mauvais Temps" (the bad weather), named due to its low rainfall, was a plot that had been abandoned for 9 years and required extensive work over 2 years to restore the entire vineyard. This involved pulling up weeds, building terraced walls, and transporting soil where needed, all using ecological, organic, and biodynamic practices. From that point on, Nico established himself among the pioneers of natural wine in his region, and wines like Nicolas Carmarans Fer de Sang testify to this.

Under the name Nicolas Carmarans Fer de Sang (iron of blood), this wine is a single-varietal made from the local fer servadou variety, sourced from old vines planted in clay soil (hence the iron). The cultivation is 100% ecological with biodynamic treatments, and the harvest is done manually at the optimal moment of ripeness. Once in the winery, the whole cluster macerates for 1 week before a gentle pressing. Fermentation is spontaneous with native yeasts, and afterwards, the wine remains in oak barrels for 12 months before being bottled without fining, without filtering, and with minimal added SO2.

Produced from a very special vineyard, Nicolas Carmarans Fer de Sang is the most powerful and expressive wine in the Carmarans range. A natural red wine of body and soul that unfilteredly reflects the essence of the terroir.
