Grenache blanc, Pedro Ximénez and macabeo are three typical varieties from the Priorat DOQ; and these same three grapes are the soul of Mas Doix Salix.
In the village of Poboleda, in the north of the appellation, this white wine is produced by Mas Doix, one of the most famous wineries in the area. The heart of this business has been beating since 1998, when Valenti and Ramon Llagostera took the lead of this project under the philosophy of transmitting ‘the uniqueness of the terroir and the essence of Priorat.’ To achieve this, all their efforts have been concentrated from the beginning on the work in the vineyard, opting for eco-friendly and biodynamic practices, totally preserving the flora and fauna. This approach is not the most common, as most winemakers try to rectify and solve most of the problems in the cellar; however, Mas Doix is part of the school formed by a small group of vignerons who know where things really matter.
Bearing this in mind, you will inevitably find llicorella in Mas Doix Salix , the typical slate soil of Priorat, which makes this region so unique. These sheets of slate – low in organic matter – extend over a rugged terrain, on terraces and slopes with high gradients (in the case of Mas Doix Salix, between 350 and 450 metres above sea level). As for the climate, Mas Doix is located to the north of the Priorat DOQ. This is considered the cool part, where the vineyards grow under a Mediterranean climate with little summer rainfall and a great contrast between daytime and nighttime temperatures. Craftsmanship, manual harvesting and an exhaustive selection is how Mas Doix Salix begins its journey. This white wine will be pressed and, after resting and cold decanting, will ferment in French oak barrels and stainless steel tanks. The final coupage and three months of aging on the lees will be the final touch in the production of this white wine from the Priorat DOQ.
