Thus, when we refer to a thirst-quenching wine, we mean a wine characterised by its freshness, smoothness, and balanced acidity. It's the kind of wine that's easy to drink, inviting continued enjoyment with each sip, perfect for quenching thirst on hot days or during relaxed moments. A project that stands out under this concept is Ramon Jané Viticultor in the heart of Penedès, Catalonia. Their commitment to reviving ancient grape varieties and ancestral methods has resulted in a collection of minimal intervention wines under the brand Tinc Set (I Am Thirsty, in Catalan), offering a unique and refreshing experience.
 
Tinc Set Ancestral Rosat. A sparkling wine crafted from the three traditional varieties macabeo, parellada, and xarel·lo plus a small percentage of the revived local variety mandó. Old vines planted on clay-limestone soil are cultivated organically with biodynamic treatments, and the harvest is done manually at the optimal moment of ripeness. In the winery, the fermentation of the varieties is spontaneous with native yeasts in stainless steel tanks, and before fermentation is complete, it is bottled in the ancestral style to finish vinification. The small percentage of mandó is added to the wine at the time of disgorging, as if it were an expedition liqueur, and finally, without added sulphites, it rests for 8 months with its fine lees before being released to the market.
