2004 saw a turning point with Los Frailes Trilogía, their first red wine (a blend of Cabernet Sauvignon and Monastrell). With this wine, they were able to demonstrate that elegant wines can also be made in the southeast of Spain. Its freshness, structure and finesse stood María José and Miguel Velázquez in very good stead. This pair are siblings and the 13th generation to run the Casa los Frailes winery in the D.O. Valencia (specifically in Vals dels Alforins). Now, the siblings are back again with Frailes Blanc de Trilogía, the white version of this successful range made from Muscat, Sauvignon Blanc and Verdil.
These three varieties are grown in the Viña de la Era, a 10-hectare vineyard planted at an altitude of 650 metres above sea level on extremely calcareous soils with fine, sandy silts. Although poor in iron, but very rich in silica, this surface provides a great minerality, freshness and acidity that is reflected in the wine. The vineyards (10 years old) are organically and biodynamically certified, guaranteeing maximum respect for the vines when caring for them and working in the field. The work is totally respectful of the plant and carried out using dry farming, achieving maximum expression of the Sauvignon Blanc, Muscat and Verdil. Obviously, the grapes are harvested by hand and throughout the process in the vineyard the best clusters are selected to be used to make Los Frailes Blanc de Trilogía.
Once the grapes reach the winery, they undergo another selection process, ensuring that only the healthiest bunches are destemmed and crushed. After making the grape pulp, Los Frailes Blanc de Trilogía is transferred to a 1,000 kg stainless steel tank where it undergoes maceration with its skins. This process, which aims to extract more aromas, is carried out at 5°C for five days. After this time, Los Frailes Blanc de Trilogía is taken to the press, where the skins are finally separated from the must. This juice is left to rest for a day (enough time to be cleaned and racked), so that it ferments in the best possible conditions. Fermentation takes place in French oak barrels at a controlled temperature of 8°C, where battonage and work with the lees happens to help the wine round out.
Finally, Los Frailes Blanc de Trilogía is bottled, creating yet another surprise.
