From the outset, Laura Ramos, the oenologist at Lavia wineries, had a clear vision. Each vineyard, each plot, and each landscape is unique, and cannot all be treated in the same manner. Only through bespoke and terrain-specific practices could the true potential of the Monastrell grape from the D.O. Bullas be unlocked. There may be times when outcomes defy expectations—occasionally a vintage may even be forfeited if it fails to meet the minimum standards—; yet despite all the efforts and tensions, the endeavor is invariably worthwhile. To appreciate this, one need only savor a sip of Lavia Valles de Lavia Valle del Aceniche or any of the other wines from this range.
 
As its name suggests, Lavia Valles de Lavia Valle del Aceniche is the quintessential embodiment of the Aceniche valley. Nestled just behind the winery, spanning the Murcian municipalities of Bullas, Cehegín, and Mula, this triangular area boasts a unique microclimate. Its exceptional nature is largely due to its elevation, with Aceniche being one of the highest valleys in the region. Here, despite the intense Mediterranean climate of the area (marked by dry and hot summers), there are significant rainfall levels (about 450 mm annually), which the soil retains, making this one of the most moist areas within the denomination. The Valley of Aceniche, which has been declared a Landscape of Interest, is also renowned for its diverse soil composition. Clays predominate, but limestone and pebbles can also be found. Regardless, the Monastrell vines that Laura works with daily have had ample time to acclimate to the rhythm of this terrain. In fact, most of the plants in the vineyard are over 60 years old and are cultivated organically, with special attention to preserving the rich biodiversity of the area.
 
Once the fieldwork has been completed (the most critical part of winemaking), Laura Ramos continues her personal interpretation of Monastrell within the winery’s facilities, which are equipped with cutting-edge advancements and the finest technology. During the harvest (Laura's favorite yet most stressful process), manual labor in boxes not exceeding 13 kilograms will be crucial. Equally vital will be the first night the grapes of Lavia Valles de Lavia Valle del Aceniche spend in a chilled environment, preserving all their aroma and flavor. Only in this way can they reach fermentation in the best possible condition. Lavia Valles de Lavia Valle del Aceniche will undergo spontaneous fermentation with stems, culminating its journey in French oak barrels (where it will age for 16 months).
