L'Antica Quercia Matiù Conegliano Brut is a sparkling wine produced by the L'Antica Quercia winery with the Glera variety in the DOCG Valdobbiadene Prosecco Superiore in Veneto (Italy).
L'Antica Quercia, named after an ancient oak tree more than 500 years old, is a small hamlet with a wonderful view over the peaks of the Dolomites and the Venitian lagoon. A total of 21 hectares, where the owner Claudio, with organic methods and processes is a true ambassador of the DOCG Valdobbiadene Prosecco Superiore.
L'Antica Quercia Matiù Conegliano Brut comes from a vineyard located in a pre-alpine area. Organic agriculture is practiced without the use of pesticides, herbicides and chemical products and the grapes are harvested by hand in boxes and with selection in the vineyard.
When the grapes enter the cellar, they’re pressed directly and the must obtained is used to start the fermentation of L'Antica Quercia Matiù Conegliano Brut with native yeasts. The wine then undergoes a second fermentation using the Charmat method. The wine is introduced into a sealed tank where it will begin to release carbon dioxide in the form of natural bubbles. Finally, it’s bottled.
