There are many Amontillados, but none quite like La Inglesa Amontillado. And believe us, we are not exaggerating. 
 
Hailing from the northwest of Andalucía, in the province of Córdoba—specifically within the D.O. Montilla-Moriles—comes one of the most noble and classic fortified wines you can find. Half matured under flor yeast, and half under oxidative ageing, La Inglesa Amontillado is a wine that leaves no one indifferent. In fact, according to experts, Amontillados are the most complete wines available (due to the two types of ageing). And La Inglesa Amontillado, with an average age of 25 years, holds its own. Indeed, despite its years, and as noted by the expert Luis Gutiérrez, La Inglesa Amontillado is "one of the great novelties of Montilla-Moriles." It is well known that in the realm of fortified wines, age is very relative. This winery, currently owned by the Doblas Alcalá family, was constructed at the end of the 19th century, and although its market presence is quite recent, the age of its vineyards is not. In fact, one of the primary objectives of the current owners is to restore the 2.7 hectares of Pedro Ximénez grapes that were planted over 20 years ago in the village of Riofrío. Here, in these modest hectares, the grapes for La Inglesa Amontillado are harvested. After the harvest, the grapes are pressed and the free-run juice is the one that goes directly into the various casks where it will ferment and rest in the solera and criadera system for several years. During this time, the yeast will form its flor until it weakens and disappears, leaving the wine exposed to oxidation.
