This winery, situated in Treviso, within the Veneto region (in northern Italy), stands as one of the prominent producers of this sparkling wine, boasting many years of expertise. Indeed, its name pays homage to the region's historical epithet (La Gioiosa et Amorosa). There isn't much to elaborate on this sparkling wine as it meets all the essential standards expected from the D.O. Prosecco: it is a monovarietal made from the glera grape (a native variety mandatory in the production of this type of sparkling wine), fermented in stainless steel vats, and undergoes a secondary fermentation in autoclaves, adhering to the Charmat method. According to this technique, pioneered by Eugène Charmat in the early 20th century, the wine undergoes a secondary fermentation in large stainless steel tanks where a tirage liqueur (a mixture of wine, sugar, and yeast) is added. This process lasts about ten days, with the lees settling at the bottom. Through a circuit, these spent yeasts are then circulated back to the top of the vessel, recontacting the wine. This entire procedure is also influenced by the pressure applied to the tanks, which is crucial for creating carbon dioxide and the bubbles found in La Gioiosa Prosecco Frizzante Filo.
