In 1988, after years of experience in the restaurant industry, he decided to take a radical turn and pursue his dream of crafting pure wines. He distanced himself from artifices and embarked on a venture where the sole rule was to work with the most genuine elements: the grape, the land, and time.
With the purchase of land in the hills of Gambellara, in the heart of Veneto, Angiolino established La Biancara, a winery that today is a benchmark in the production of low-intervention wines. But what does it truly mean to make wine solely with grapes? For him, it is a profound commitment to nature: no chemicals, no added yeasts, only selected grapes that ferment spontaneously. A process that honours the natural rhythm of the terroir, allowing the wine to speak for itself.
A perfect example of this philosophy is La Biancara Merlot IGT Veneto, a wine crafted with pure merlot from the finest high-altitude vineyards of Gambellara. This wine undergoes spontaneous fermentation in open vats, with maceration that extracts all its essence and character. After fermenting for approximately 15 days, it remains a few more days with the skins, is racked, and then aged for 24 months in old oak barrels. An entire process that allows the wine to mature patiently and unhurriedly.
