About Jean-Claude Boisset Chardonnay Les Ursulines

Among the religious orders that were established between the 16th and 17th centuries, the Order of St. Ursula of the Roman Union was set up for educational purposes. In fact, its members, the Ursulines, dedicated themselves mainly to the teaching and Christian formation of young women in their convents. But with the advent of the French Revolution, the property was secularised and monasteries, like the one in Nuits-Saint-Georges in Burgundy, were stripped out. Today, three centuries later, this same Ursuline convent has been transformed into a fascinating wine cellar by Jean-Claude Boisset. A new generation winemaker who has quickly made a name for himself in the Burgundy wine region thanks to the purity and elegance of his wines.

His Jean-Claude Boisset Chardonnay Les Ursulines, a wine whose name refers to the very convent where it is made, comes from old Chardonnay vines that are cultivated using respectful agriculture. The grapes are harvested by hand in 20 kg boxes and, once in the winery, the bunches are lightly pressed for 2 hours. Then, at a temperature of 12ºC, it is transferred directly to barrels where it is kept on its lees. Fermentation is long, about 10 months, and only native yeasts are used. After fermentation, half of the wine is transferred to French oak barrels where it remains for 14 months and the rest of the wine is kept in stainless steel tanks.

Putting the influence of man in the background and aiming to highlight the essence of Burgundy, Jean-Claude Boisset Chardonnay Les Ursulines is pure expression of the terroir. A Chardonnay born and made in a sacred place that radiates richness, minerality and freshness.
