Jacques Lassaigne Coteaux Champenois Rouge Chéres Vignes is an organic and biodynamic, barrel-aged red wine made by the Jacques Lassaigne winery with the Pinot Noir variety in the AOC Coteaux Champenoise denomination, in Champenoise (France).
 
Jacques Lassaigne’s great asset is Montgueux, part of a hill that lies 270 metres above sea level and has unique calcareous soils. Jacques Lassaigne has gained a deep understanding of these characteristics by working hard and steering away from anything artificial. This is how he has managed to showcase the secrets of such a unique expression in a wine that can now be found in some of the best restaurants in the world.  
 
Jacques Lassaigne Coteaux Champenois Rouge Chéres Vignes comes from old vines planted in chalk soil on top of a hillside. The vines are cultivated using ecological agriculture and no chemical products, instead working according to biodynamic principles. The harvest is carried out manually at the optimum point of ripeness. 
 
In the winery, the grapes used to make the Jacques Lassaigne Coteaux Champenois Rouge Chéres Vignes wine are vinified separately by plot. Firstly, they ferment spontaneously with native yeasts in stainless steel tanks and then the wine ages for a long time in oak barrels. It is finally bottled without being clarified, filtered or adding sulphur. 
 
A product of the calcareous soils known as the “Montrachet de Champagne” Jacques Lassaigne Coteaux Champenois Rouge Chéres Vignes is a unique expression of a unique terroir. A Pinot Noir with impeccable minerality.
