About Isabelle et Denis Pommier Chablis 1er Cru Cote Lechet

The classification system in Burgundy (France) is based on the quality of the terroir and its ability to produce exceptional wines. A Premier Cru designation indicates that the grapes come from vineyard plots with optimal soil, climate, and exposure conditions, allowing the creation of more complex wines with greater ageing potential compared to those of lower classification. In the case of Isabelle et Denis Pommier, a couple of winemakers who started their project in 1990 with small plots inherited from Denis's grandfather, they have managed, through dedication and skill, to expand their estate to encompass 23 hectares of high-quality vineyards. Thanks to this effort, they produce vibrant and aromatic wines that perfectly express the coveted Kimmeridgian terroirs in Burgundy, reflecting both the richness of the soil and their commitment to organic viticulture.

An example of this work is found in Isabelle et Denis Pommier Chablis 1er Cru Cote Lechet, a chardonnay made from 60-year-old vines planted in a limestone terroir in the AOC Chablis Premier Cru. The vineyard is worked organically, and the harvest is done by hand with careful selection to ensure the quality of the grapes. In the winery, the fruit is gently pressed, and the resulting must ferments at controlled temperatures in tanks (50%) and neutral barrels of varying ages (50%). Afterwards, the wines are blended and aged for 18 months in a combination of 2/3 tanks and 1/3 oak before being bottled.
