Fino, Amontillado, Oloroso, and Pedro Ximénez – could there be a more exquisite quartet? Indeed, there is! The harmonious blend of these wines culminates in Harveys Bristol Cream, one of the most widely savored fortified wines within the esteemed D.O. Jerez-Xérès-Sherry.
 
According to its producer, Bodegas Harveys, a bottle of this esteemed fortified wine is enjoyed every six seconds. The exact formula for its success remains elusive, yet it undoubtedly involves a distinctive mixture, comprising 30 soleras of Jerez wines established since 1880.
 
Regarded by many as legendary, Harveys Bristol Cream originated in Bristol. At that time, the wine trade between Southern Spain and the English city was dominated by the company John Harvey & Sons, which was marketing a popular beverage known as Bristol Milk. Over time, a new version of this wine emerged, somewhat richer and sweeter. During the visit of an aristocrat, they sampled this new creation: “If that is the Milk, then this must be the Cream,” declared the lady. Henceforth, Harveys Bristol Cream was christened with its current name.
 
As purveyors to the British Royal Household—a distinction they proudly hold to this day—Bodegas Harveys remains a benchmark for excellence. And deservedly so, as the winery continues its operations in Pago de Macharnudo, one of the most prestigious estates within the Sherry Triangle. Considered the Grand Cru of the D.O. Jerez-Xérès-Sherry, Harveys currently boasts 250 hectares of vineyards in this prime location, predominantly cultivating two grape varieties: Palomino and Pedro Ximenez. These will serve as the gateway to a realm where, depending on the method of production and maturation, up to four distinct wines are crafted. These include Fino (aged under the celebrated flor yeast for a minimum of three years); Amontillado (a transition between biological and oxidative aging); Oloroso (benefitting from the full impact of oxygenation); and finally, the sweet wine of Pedro Ximénez (made from the sweetest grapes, sun-dried to raisin-like consistency, with added alcohol to halt fermentation, increase its alcoholic content, and preserve its inherent sweetness). Each with their unique characteristics, they are masterfully blended in a cuvée that gives life to Harveys Bristol Cream.
