About Garnier et Fils Chablis

San Vicente is known as the patron saint of winegrowers. In principle, despite what it may seem at first glance, there’s little in the life of this saint to link him to wine. So why do winegrowers celebrate this martyr's day in style on 22 January?

In principle, different theories try to find the point of union. Some say he was tortured with tools and utensils similar to those used daily in the vineyard; others say that January 22nd is ideal since on that date, between the new wines and the pruning of the vineyards, workload in the fields is minimal, allowing the winegrowers to celebrate and leave aside their daily obligations. However, it seems that the most accurate theory points to the relics of St. Vincent which traveled through Europe. According to history, Childebert I ordered the construction of a basilica dedicated to St. Vincent, where his tunic would be kept. This abbey, like many others in France, was looked after by monks who were dedicated to the vineyard and who entrusted themselves to Saint Vincent to protect both the vines and the production.

Be that as it may, at this stage, almost no one thinks about this and both winegrowers and people outside this world, dedicated themselves exclusively to drinking and enjoying themselves on that day. In the case of the A.O.C. Chablis (in the north of France, in Burgundy) this festival is greatly celebrated. In fact, even the vignerons bring small batches of grapes to make the wine that will be drunk during these days, such as Garnier et Fils Chablis.

Garnier et Fils Chablis is a white wine made by the Garnier et fils estate from Chardonnay harvested in Maligny, Ligny et Villy. Each of these villages brings its own character to the wine, mainly calcareous and mineral touches typical of the Kimmeridgian soil (rich in clay, limestone and fossil remains).

Garnier et Fils Chablis ferments from native yeasts at a controlled temperature (22ºC) for an average of 150 days. After malolactic fermentation, Garnier et Fils Chablis is aged for 11 months in stainless steel tanks. There it will be in contact with the lees, which will round it out with greater volume on the palate and provide characteristic aromas of these dead yeasts. After clarification (with bentonite) and filtration, bottling is carried out.

Garnier et Fils Chablis 2019 is a very precise white wine. There’s no doubt either on the palate or on the nose, as they show typical Chardonnay characteristics.
