About Esencia Rural Pampaneo Ancestral

Esencia Rural Pampaneo Ancestral is a natural, ecological and vegan sparkling wine made with the Airén variety in Toledo (Castilla La Mancha) by Esencia Rural.
 
Julián Ruiz is a winegrower in the small town of Quero (Toledo) who decided to start making sulphite-free wine after his first harvests of organic melons and peppers. His winery, Esencia Rural is a tribute to every farmer who spends every day working the land with dignity and respect. 
 
Esencia Rural Pampaneo Ancestral comes from the 38 hectares of vineyards in the hot interior of the Iberian Peninsula. These are very old vines planted on sandy-calcareous soils and cultivated using traditional and artisan methods. There is no irrigation, no mechanisation and no chemical treatments. Only organic and environmentally friendly treatments are used. 
 
The Esencia Rural Pampaneo Ancestral grapes are destemmed and then macerated, producing only a yeast cap, spontaneous fermentation takes place with native yeasts. Before the end of the process, it is bottled to allow the carbon dioxide to develop. Finally, the sparkling wine is sold without disgorging. 
 
Made in one of the sunniest places on the Iberian Peninsula, using grapes with high alcohol content and no acidity, Esencia Rural Pampaneo Ancestral is a really great sparkling wine. A fresh and crisp traditional wine that will leave you lost for words.

Esencia Rural Pampaneo Ancestral 2020 is a vivacious ancestral sparkling wine bursting with aromas of white and tropical fruits, complemented by mineral undertones. On the palate, it is effervescent, invigorating, and flavorful. This pétillant boasts a zesty acidity and a prolonged, saline finish.
2019 Esencia Rural Pampaneo Ancestral 2019 is a sparkling wine with fine and playful bubbles and aromas of fresh fruit and herbaceous notes. On the palate it is fresh, fruity and crisp. A wine with a volatile acidity that brings freshness and lightness to the fruit.
