About Dominio D´Echauz Albillo Mayor
Have you heard of the Basajaun? In Basque-Navarrese mythology, it is an imposing figure, a giant protector dwelling in the deepest forests, safeguarding the balance of nature. A guardian of flocks, forecaster of storms, and invisible sentinel against wolves, its role is to preserve the essential.
In the heart of the Sorian Ribera del Duero, at an altitude of around 1,000 metres, the myth transforms into a tangible project. Here lies Dominio d’Echauz, an estate intersected by the Camino de la Lana and the Camino del Cid, where the mission is to protect, organise, and secure the future of one of Europe’s most unique viticultural heritages. Like the mythological Basajaun, this domain acts as a guardian, but instead of forests, it preserves something equally vibrant: the genetic diversity of the vine.
Behind it is the García-Baigorri family and the historic work of Vitis Navarra, a centennial nursery that has made research and varietal recovery its hallmark. Over time, what began as a nursery has evolved into something broader, encompassing viticulturists, grape suppliers, and ultimately, winemakers under the name Dominio d’Echauz. A project that does not operate as a conventional winery, but as a system. A space where science, viticulture, and heritage intersect.
The vineyard, sprawling over approximately 787 hectares, with about 130 dedicated to vines, is structured into three major sites: Val d’Echauz, Izaldea, and Las Vilaneras. Poor soils, extreme climate, and high altitude create a harsh setting… and precisely for that reason, a most intriguing one. Here, viticulture is precise, almost surgical. Every decision matters. Each plot is a piece of a living archive.
Dominio d’Echauz Albillo Mayor is a fine example. Crafted entirely from this historic variety of the Duero Valley, it originates from the collection of ancestral biotypes planted in the Alto del Cuerno plot, within the Val d’Echauz site. The vinification aims to respect its identity to the fullest. To achieve this, it ferments and ages on lees for 8 months in French and Austrian oak barrels. The result is a white wine with texture, depth, and a pronounced freshness, steering away from the flat profile and venturing into a more gastronomic and complex realm.
In a time when wine tends towards standardisation, Dominio d’Echauz Albillo Mayor reminds us that difference is not a risk, but a richness. And that sometimes, the guardians do not dwell in forests… but among vines.
