About Domaine Violot-Guillemard Hautes-Côtes de Beaune

For over a century, specifically since 1880, the Violot-Guillemard family has been devoted to viticulture in Pommard, east of Beaune. Throughout these decades, several family members have made history, such as Thierry. "Great wines can only be crafted from the finest grapes," is often heard beneath his impressive moustache. Now his son Joannes, representing a new generation, continues to pen this remarkable story with Domaine Violot-Guillemard Hautes-Côtes de Beaune, an exquisite organic red wine. 
 
This red wine, produced under the AOC Hautes-Côtes de Beaune designation, is crafted from pinot noir, the quintessential grape of Pommard. In fact, the name of this village derives from Pomona, the Roman goddess of trees and fruit, whom the area's early inhabitants worshipped. This was their way of explaining the exceptional fertility of this land, rich in clay and limestone soils. In the case of Domaine Violot-Guillemard, the estate dates back to 1936, the year when the first vines were planted, which are now cultivated entirely organically. 
 
Domaine Violot-Guillemard Hautes-Côtes de Beaune is harvested and destemmed, then transferred to fermentation tanks where indigenous yeasts spontaneously begin their work. It is important to note that in all its productions, Domaine Violot-Guillemard employs minimal intervention, merely overseeing that the process unfolds correctly. Finally, Domaine Violot-Guillemard Hautes-Côtes de Beaune is racked and transferred to oak barrels where it will rest for several months. Throughout the process, all movements of Domaine Violot-Guillemard Hautes-Côtes de Beaune are conducted by gravity, allowing the wine to settle naturally, without clarifications or filtrations.
