Fermented and aged in oak barrels, Domaine des Quatre Piliers Bel Air is an exceptional white wine, crafted by Valentin Desloges in Saint-Aignan, a village nestled in the heart of the Valle del Loira, within the A.O.C. Touraine. Utterly intense and untamed (the French word sauvage, translating as 'wild', is the namesake of this grape), the sauvignon blanc thrives in this land crisscrossed by the river Cher (a tributary of the Loire) with soils that are a blend of clay and limestone. Here is where Valentin Desloges grew up, and it is here that his journey has led him back. With a deep passion and meticulous attention to detail, Valentin ecologically manages the ten hectares of the estate's vineyards. For Domaine des Quatre Piliers Bel Air, the grapes are cultivated in the Bel Air vineyard, located on the left bank, and are exclusively used in its production.
Domaine des Quatre Pilliers is particularly renowned for its use of wood, with fermentation and aging processes that - depending on the grape variety - will utilize a mix of new and used barrels. For Domaine des Quatre Piliers Bel Air, 20% of the barrels will be new oak from Burgundy, where the must will spontaneously ferment with indigenous yeasts. The wood for these barrels is sourced directly from the Loches forest, a mere 15 km from the estate, and is dried by Valentin himself. Finally, Domaine des Quatre Piliers Bel Air will mature in these same vessels until it is time to be bottled. During this period, Domaine des Quatre Piliers Bel Air will have tempered its character; nonetheless, it retains a spirited temperament for the future. Take our word for it.
