About Devaux Cuvée Ultra D

Known as the house of “the three champagne widows” Devaux is a winery that was founded by brothers Jules and Auguste Devaux in Epernay (Champagne) but since the mid-nineteenth century, throughout its history, it has been run by women. Talented and energetic ladies who, at a time when they had no say in the matter, were widowed by their respective Devaux husbands, and took the reins of the company and led it to become one of the leading wineries in the AOC Champagne. Madame Claude-Joseph Devaux in 1846, Augusta-Maria Herbin in 1879 and Marguerite Marie-Louise in 1907 are the architects of a maison that now, under the leadership of Laurent Gillet, continues to reflect the genuine, original and feminine character of its premium champagnes.

One of their leading wines, Devaux Cuvée Ultra D is a sparkling wine made with Pinot Noir from the Côte des Bar and Chardonnay from the Côtes des Blancs, Montgueux and Côtes des Bar. When the grapes reach optimum ripeness, most of them ferment in stainless steel tanks, with a small part in oak barrels. They then undergo partial malolactic fermentation and once the wine is ready, an assemblage is carried out with a minimum of 35% reserve wines. The second fermentation in the bottle is carried out with a minimum aging of 5 years and finally, at disgorgement, 3 grams of sugar per litre is added. Before being released for sale, the champagne spends at least 6 more months in the bottle rack.

So, with a very low dosage and a long aging period, Devaux Cuvée Ultra D is a clear champagne full of freshness and minerality that perfectly describes the entrepreneurial character of the women of the family. Undoubtedly the alter ego of the Devaux house.
