About Clandestin Les Revers

Doussot and Gautherot, son-in-law and father-in-law, and going against the grain in the AOC Champagne. And although doing something differently from everyone else is often difficult and raises a few eyebrows, the truth is that you can only achieve great things by trying something new. These two winegrowers decided to put their faith in the quality of some plots of land that nobody valued because they were located in a place that was too cool. However, from their point of view, the low temperatures allow the grapes to ripen for longer which gives them more depth and structure.  They work hard under the name Clandestin, and following the methods of organic agriculture and limited yields, they grow a pure fruit ready to vinify, without needing to add or take away anything.

This raw material is used to make Clandestin Les Revers. A Chardonnay cuvée from a 0.4 hectare plot with vines over 20 years old planted in kimmeridgian soil. A pure and expressive grape that is harvested by hand and selected by quality and similarities. The wine then ferments and ages spontaneously with its own yeasts in large barrels of neutral French oak and finally undergoes a second fermentation in the bottle with aging on lees for a minimum of 24 months.

Clandestin Les Revers comes from a hidden location that nobody believed in. This champagne, made by people going against the grain, stands out wonderfully from the ordinary.

 

2018

Clandestin Les Revers is a sparkling wine with aromas of ripe white fruit, citrus notes and mineral hints. On the palate it is fresh, vibrant and elegant. A champagne with marked acidity, a very pleasant sparkling texture and a seductive, slightly saline finish.
