After years of learning and experiences across various vineyards, he assumed the leadership of the Chavy-Chouet winery at the age of 22, following his father's death. Since then, he has seamlessly blended family tradition, precision, and creativity to craft exceptional wines that capture the essence of Burgundy.

Chavy-Chouet Les Meurées Maranges exemplifies the meticulous care and passion of Romaric Chavy. This is a single-varietal Chardonnay, with 30-year-old vines planted on clay and limestone soils. The winery practices organic farming, and once the grapes reach their optimal ripeness, the finest berries are meticulously selected for vinification. Fermentation is carried out with indigenous yeasts, and the wine is aged for 10 months in foudres, with 20% new oak.
