About Cero Zinfandel
At any esteemed gathering, there is invariably a toast. And without fail, regardless of the location, the company, or the occasion, there will be someone who does not consume alcohol, halting the moment: "Hold on, hold on, I only have water... and that's bad luck!" This situation would not arise if, on the table or within reach, there was a bottle of Cero Zinfandel, a non-alcoholic, vegan, monovarietal wine crafted in California.
When it comes to toasting with non-alcoholic beverages, no one wishes to tempt fate. There are several theories regarding the origins of this superstition. The first points directly to the ancient Greeks, who believed that the deceased would drink from the waters of the River Lethe (which signifies oblivion), leaving behind their past lives. The second theory traces back to the Middle Ages when potable water was scarce, making it common for one's health to be at risk when drinking anything other than wine or beer. The last refers to the Russian tsars. It is said that at imperial dinners, the fate of the honoree depended on the contents of the glass raised by the tsar in their honor: if it contained wine, the honoree was celebrated; if it contained water, it was synonymous with condemnation and sentencing.
As its name suggests, Cero Zinfandel is made from the zinfandel grape, the most widely cultivated red variety in California, known for its large, compact clusters of black grapes with very thin skin. Highly susceptible to mildew and rot, this grape thrives in the western state of the US, famous for its advection fogs. These arise in the summer when the Cold California Current (which flows from Alaska parallel to the coast) meets the warm, moist air of the Pacific. This warm air rises and glides over the cold air, causing water vapor and a dense fog that features in most snapshots taken of San Francisco's Golden Gate. Despite these challenges, the zinfandel is a hardy variety, adaptable to various climates and soil types. Its ripening occurs unevenly, necessitating manual harvesting to select only the best berries.
The production process of Cero Zinfandel is conducted gently, using a method of vacuum distillation at low pressure and at 30°C. As a result, the wine retains its quality without the addition of any sugars or sweeteners. It is the ideal option for the superstitious who prefer not to gamble with luck during toasts.
