A picture (in this case, a glass) is worth a thousand words. But if even this rosé from the AOC Côtes de Provence isn't a compelling argument on its own (which we doubt), we recommend you play the Sacha Lichine card, its creator, who has elevated rosé wines to the ranks of the great wines. After a lifetime dedicated to wine—his father was the esteemed and renowned Alexis Lichine—Sacha saw a tremendous opportunity in rosé, both economically and oenologically. And he has succeeded in both: since 2006, he has been exporting bottles of Caves d'Esclans Garrus worldwide, one of the finest rosés available today.
 
Caves d’Esclans Garrus originates from a single vineyard of century-old vines located in the heart of Provence, northwest of Sr. Tropez. Here, on his estate, Sasha has found not only his personal refuge but also the place to bring his projects to life. In the rich mix of soils and the mild climate of the region, Sasha finds the perfect allies for Caves d’Esclans Garrus. However, while the work in the field is crucial (always sustainable and respectful), Caves d’Esclans Garrus stands out for its meticulous production.
 
At Caves d’Esclans Garrus, everything begins with the harvest, which is done manually at dawn and finishes before noon to avoid the peak heat hours. This moment only arrives when the grapes have reached their optimal ripeness and are ready to be placed in 10 kg boxes that will be taken to the winery. If this first selection were not enough, Caves d’Esclans Garrus will undergo a second and third inspection where an optical eye is used to classify each bunch. Only after this step are the grapes destemmed and pressed with nitrogen and at cold temperatures (between 7°C and 8°C). In this stage, the low temperatures are crucial to ensure that the must of Caves d’Esclans Garrus does not oxidize and reaches fermentation in the best possible condition. This step, perhaps the most significant, takes place in 600-litre barrels. Finally, Caves d’Esclans Garrus will rest for approximately a year in this same material, with a bâtonnage twice a week, until it reaches its optimal point where it will be perfect for bottling.
