Mallorca, a Mediterranean island that harbours genuine natural treasures, boasts Cati Ribot as one of its great unveilings. A third-generation winemaker, Cati began by adhering to family traditions, working with high-strength, full-bodied wines and noble varieties. However, everything changed when she discovered the world of minimal intervention wines. It was a turning point, and from that moment there was no turning back. She immersed herself fully in the Mallorcan winemaking tradition and became the foremost advocate of indigenous varieties and ancestral methods. With her project Ve d’Avior, which means "comes from the past" in Mallorcan, Cati is bestowing a new identity upon Mallorcan wines: fresher, authentic, and deeply connected to the land of their origin.
One of the most representative wines of this project is Cati Ribot Son Llebre Negre, a natural red wine produced at the Son Llebre estate, in the northeast of Mallorca, using the indigenous varieties escursac, callet, callet negrella, esperó de gall, and giró negro. These vines are cultivated in clay-limestone soils and with biodynamic treatments, harvested manually at the optimal moment of ripeness. In the winery, vinification is carried out with spontaneous fermentation and maceration with varying proportions of whole grapes. Subsequently, part of the wine undergoes ageing for 5 months in 500-litre fourth-use French oak barrels. Finally, the wine is bottled and stored in the winery for 6 months, allowing it to integrate and fully develop.
Cati Ribot Son Llebre Negre is a true reflection of Cati Ribot's passion for her land and for the traditional methods that preserve the essence of Mallorca. A wine with character, fresh and brimming with authenticity, it transports us directly to the island's roots.
