About Canasta Cream
Canasta Cream is a fortified wine crafted by Bodegas Williams & Humbert in Jerez de la Frontera (Cádiz) within the DO Jerez-Xérès-Sherry.
The history of Bodegas Williams & Humbert commenced nearly 130 years ago. Established in 1877 by Sir Alexander Williams and Arthur Humbert, they played a pivotal role in the creation of the Denomination of Origin Jerez-Xérès-Brandy. Today, the winery is acknowledged as one of the most esteemed producers globally.
Bodegas Williams & Humbert are situated within the triangle formed by Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda. This area is distinguished by a unique microclimate shaped by the Guadalquivir and Guadalete rivers, referred to as the "Mesopotamian valley" of western Andalusia.
Currently, Williams & Humbert stands as the largest winery in Europe, with its distributor, Sovisur, distributing all its products alongside wines from other denominations such as Rioja, Ribera del Duero, Rueda, and Rías Baixas.
Canasta Cream is a wine produced from Palomino and Pedro Ximénez grapes sourced from the vineyards of Balbaína, Añina, and Carrascal, aged between 20 and 60 years, on the characteristic albariza soil.
Following the manual harvest, with grape selection in the vineyard, the free-run musts are chosen to ferment under controlled temperature, before being fortified to 19.5% vol. alc. Once the Palomino and Pedro Ximénez sobretablas are blended, it undergoes a minimum aging of 6 years using the criaderas and soleras system. The sweetest flavour of the fortified wines ensures that time, albariza, and patience result in something you will want to experience again.
