About Camillo Donati Il Mio Zoe Malvasia Dolce

In ancient times, sweet white wines were the most prized. Crete, a Greek island, was one of the main producers and enjoyed widespread distribution and commercial success throughout the Mediterranean. Inspired by this ancestral premise, Camillo Donati, a former accountant who left everything to fully dedicate himself to the vineyards inherited from his father and grandfather in the Italian locality of Groppone, in Parma (Emilia-Romagna), crafts natural wines following the spontaneous processes that have always characterised winemaking throughout the centuries.

Thus, Camillo Donati Il Mio Zoe Malvasia Dolce is a sparkling wine that transports us directly to a bygone era both in its method of production and its results. Made from the Malvasia di Candia Aromatica variety, the grapes are cultivated organically with biological treatments. At no point are chemical products used that could alter the natural balance of the terroir. In the winery, Donati, adhering to minimal human intervention, conducts a spontaneous fermentation with native yeasts in stainless-steel tanks and with maceration on the skins. During fermentation, it is halted through filtration using a sack filter, resulting in a pleasantly sweet wine.

The final result is Camillo Donati Il Mio Zoe Malvasia Dolce, a sparkling wine with considerable residual sugar and low alcohol content (4 to 6%). A true homage to a unique viticultural past that can be enjoyed at any time.

Camillo Donati Il Mio Malvasia Dolce 2020 is a fruity sparkling wine with aromas of white fruit, citrus notes and herbal hints. On the palate it is fresh, sweet and pleasant. An easy-drinking wine with a fine integrated bubble and low alcohol content.
