“To cultivate without destroying living beings or harming humanity, utilizing the most elementary and salubrious methods” is the guiding principle to which Sébastien Bobinet and Emeline Calvez aspire when crafting their wines. And thus far, for better or worse, every bottle they have produced has been an unmitigated success. Among the most lauded: Domaine Bobinet Summertime Le Temps est Bon.

Slightly effervescent, yet replete with sophistication, this sparkling wine has positioned itself among the most compelling offerings from Saumur, in the Loire region (southwest of France). Currently, the duo cultivates just a few hectares in the village of Beaulieu, atop the Dampierre Heights, where the ubiquitous tuffeau stone dominates the terrain. This particular white limestone is renowned for its ability to retain moisture and create reserves that aid the vineyards in coping with the sunny, oceanic climate, characterized by sparse rainfall. Most of the vines are aged, over 35 years old, inherited from Sébastien's family, who have been devoted to viticulture for a lifetime. Specifically, Sébastien represents the ninth generation to take the helm of this enterprise. And it is he alone who has elevated Domaine Bobinet Summertime Le Temps est Bon to new heights of success. In this journey, he has not been alone. Alongside him, of course, is Emeline, and without any formal education, they have been mentored by some of the best, including the Foucault brothers, Olivier Cousin, Jules Chauvet, and Marcel Lapierre – the crème de la crème.

With such godfathers, little more needs to be said. From them, they have learned how to nurture and work the land. From them, they have inherited the meticulous care that the vines must undergo, compelling their roots to delve deep into the earth. One must remain vigilant over each plant until the precise moment of maturation is reached. Not all plants behave identically, thus necessitating tailored care for each plot, reducing yields when necessary, pruning, and managing suckering, as well as ploughing the soil to maintain its vitality... and all this using only copper Bouillie Bordelaise or Bordeaux mixture. This concoction is a blend of copper sulfate and slaked lime, which is incredibly effective for fungal control. All other pesticides are strictly prohibited. In the cellar, Domaine Bobinet Summertime Le Temps est Bon begins fermentation in tanks and, before fermentation completes, it is bottled. In this second vessel, the yeasts finish their work. The carbon dioxide that is released remains trapped in the bottle, thus forming the characteristic bubbles of these wines. This technique is known as the ancestral or natural method.
