Wine and... Christmas: the perfect wine for every dish

The Christmas festivities are the perfect time to indulge in sumptuous meals and, of course, wines that complement them flawlessly. Although sparkling wines are the stars of celebrations, here we suggest some alternatives to surprise your guests with pairings that will elevate each Christmas dish. From appetisers to desserts, find the ideal wine for every occasion.

Starters and Appetizers

Appetizers are the perfect prelude to whet the appetite and prepare the palate. If you're looking for something classic, a fresh champagne from a small producer is always a safe bet. For a more original touch, a refreshing albariño or a manzanilla from Jerez will enhance the flavours of oysters, cured meats, or tapas.

Prefer reds? Young wines from Rioja or mencías from Bierzo pair well with cured meats. Avoid overly robust reds for appetizers and save the fuller-bodied ones for the main courses.

Main Courses

Roast turkey: A red from the Rhône like Châteauneuf-du-Pape is ideal. If you opt for duck, a pinot noir will be a good ally.

Smoked fish: German rieslings offer freshness and a slight oily texture perfect for accompanying trout or eel. For salmon, a sauvignon blanc or even a pinot noir pair wonderfully depending on the preparation.

Lamb: A medium-bodied Rioja red will highlight the herbs and spices of roast lamb. A wine made from the syrah variety will harmoniously accompany the intensity of roast lamb.

Chicken in creamy sauce: A balanced chardonnay, not overly oaked, is the ideal choice.

Roast goose: Two options: a structured red like Barolo or, if you prefer whites, a riesling spätlese that will perfectly complement fillings with dried fruits or spices.

Pasta Pairings

Pasta with Bolognese sauce: A Sangiovese or a Barbera will complement the intensity of the flavours well.

San Esteban cannelloni: A rosé sparkling wine will add freshness and elegance to this traditional dish.

Pairings for Vegetarian and Vegan Dishes

The world of wines offers excellent options for those following a vegetarian or vegan diet. Let's dispel the myth that white wines are the only option for these dishes and discover surprising combinations that will enhance every bite.

Red wines with vegetables: Red wines can be a fantastic choice for vegetarian dishes, especially with legumes, aubergines, or mushrooms. Opt for full-bodied or medium-bodied reds that add depth without overpowering the dish.

Tofu and wines: Tofu can pair with reds if prepared with sauces or spices. A red wine with spicy or fruity notes will highlight the dish's characteristics.

Salads and raw dishes: Choose crisp unoaked white wines or rosé wines that complement the freshness of the ingredients.

Purées and sweet vegetables: White wines aged in oak or on their lees are ideal for dishes with purées or sweet vegetables like pumpkin and sweet potatoes.

Desserts and After-Dinner

For the end of the meal, sweet wines and sparkling wines play a crucial role:

Panettone: A light and fruity prosecco or Moscato d’Asti will be perfect.

Christmas Pudding: Opt for a sweet wine like Moscatel de Valencia or a Tokaji to balance the richness of the dessert.

Turrones: Aged sparkling wines cleanse the palate, but if the turrón is chocolate, a Port or a sweet garnacha are excellent choices.

This year, dare to experiment and create new combinations that will delight your guests. Remember, the most important thing is to share special moments and toast with the finest wines. Happy holidays and enjoy the Christmas pairings that make each meal an unforgettable memory!
