About Bimbache Blanco

Bimbache Blanco is a barrel-aged white wine made by Bimbache Vinícola with the Vijariego Blanco, Listán Blanca, Baboso Blanco, Forastera and Gual varieties in the D.O. La Palma in the Canary Islands. 
 
Bimbache Vinícola is run by Rayco Fernández and Pablo Matallana. This adventurous pair, after setting up Puro Rofe in Lanzarote, decided they wanted a new challenge on the island of El Hierro. Starting from an exquisite set of unique local varieties, very diverse soils and climates, and minimal intervention production, they produce wines that express the identity of the place like no other. 
 
Bimbache Blanco is made with a wide range of varieties, with the main one being Vijariego Blanco. These vineyards are located in the north and northeast of the island of El Hierro and the vines are planted on volcanic sandy soil with small amounts of clay. These are old vines aged between 50 and 100 years old and lying at an altitude of 500-800 metres above sea level. They are cultivated manually and with the utmost care.
 
In the winery, after the whole bunches are gently pressed, the Bimbache Blanco must ferments spontaneously with native yeasts in stainless steel tanks. Then the wine ages in a tank, a Stockinger foudre and in French oak barrels for 12 months.
 
A very small production, Bimbache Blanco is a surprise to everyone. A unique blend of unique varieties that has achieved the highest scores ever given to an El Hierro winery by the prestigious Wine Advocate.
 

 

2020

Bimbache Blanco 2020 is a distinctly unique white wine. Olfactorily, it is highly expressive, exuding scents of citrus fruits (lime and pineapple), ripe stone fruits, fennel, and bay leaf. On the palate, it is silky and vibrant, with a pronounced intensity, featuring flavors of lemon and a subtle saline finish.
2019 Bimbache Blanco 2018 is an elegantly contoured white wine, boasting a highly expressive bouquet of zesty citrus fragrances, stone fruit essences, and hints of dried aromatic herbs. On the palate, it is silky, dense, and invigorating. A wine characterized by its luminous acidity and a finish that is both citrusy and saline.
