About Benoit Courault Ephémères

Sommeliers possess a profound knowledge of wines, encompassing elements such as flavour, aroma, pairings, and the correct manner of serving them. However, the oenologist takes it a step further, developing a technical and comprehensive understanding of the winemaking process, from the grape harvest to the wine bottling. It is not uncommon for some sommeliers, captivated by the desire to understand and master every stage of production, to decide to go a step beyond and start creating their own wines. Benoit Courault, a trained sommelier, has always been deeply connected to the world of wine, and he quickly felt the need to delve beyond the surface, seeking to comprehend what truly occurs behind each bottle. This is how he began crafting his own wines and, in a short time, has become one of the most popular oenologists in the world of Loire wines and French “natural” wines. 

After training in Beaune, discovering the wines of Dominique Derain and Yvon Métras, and working for over two years with Eric Pfifferling, Benoit Courault knows exactly what he is doing. In charge of 5 hectares of old vineyards in Anjou, in the Loire (France), he presents creations such as Benoit Courault Ephémères, an ancestral sparkling wine made from the indigenous chenin blanc variety, cultivated using organic treatments, biodynamic processes, and without the use of machinery; his draft horse assists him in his work. In the winery, the pressed grapes undergo spontaneous vinification with native yeasts and, before fermentation is complete, it is bottled unfiltered, unfined, and without added sulphites.

The result is Benoit Courault Ephémères, a pét nat that, as its name suggests, conveys the idea of something ephemeral, unique, and transitory. A wine that reflects the essence of a wine capturing the moment and the terroir in a pure and natural form.
