One of his wines, Baroni Di Pianogrillo Catarratto Lucido Terre Siciliane, is made from vines of the indigenous catarratto variety planted in clay-limestone soils. The vineyard is cultivated under organic certification, preserving the environment at all times. After manual harvesting, the grapes are swiftly transported to the winery to be meticulously selected and gently pressed. Fermentation takes place in stainless steel tanks at a controlled temperature, followed by a 5-month maturation on fine lees before the final bottling.
