About Barbadillo Amontillado Principe

At present, more than 40 wineries, as well as warehousing companies and producers, are part of the D.O. Jerez-Xérès-Sherry. Here, as in any family, there is everything from small producers to giants, like Bodegas Barbadillo. They produce 12 million bottles per year. However, the real highlight of this winery is its wide range of products, including Barbadillo Amontillado Príncipe.

Barbadillo Amontillado Príncipe is an amontillado aged for 15 years that showcases the Jerez wine aging method in an exceptional way. If we were to order sherry wines by aging time from shortest to longest, amontillado would be in second place (manzanilla or fino, amontillado, oloroso and palo cortado). Amontillado is a wine that begins as a manzanilla, with aging under a yeast cap (where the yeasts protect the wine from oxidation) that will last about eight years. After this time the yeasts begin to die, the yeast cap weakens and the wine begins to be exposed to oxygen which will gradually begin to oxidise it (seven years in the case of Barbadillo Amontillado Príncipe).

In this intermediate step lies the amontillado, becoming a very special wine, where you can sense the notes of both types of aging. This exceptional quality could not be achieved without the high quality of the raw material used. This is where the Palomino Fino comes in, a variety grown on the 500 hectares that the winery owns in Jerez. The albariza soil and the east and west winds (which provide dryness or humidity to the vines) give the fortified wines all the character of this land.
