About Astobiza Txakolí

Txakoli is a Basque wine that has come a long way in recent years, but perhaps not a lot of people realise that. People still think it is an acidic, light drink for locals. But the truth is that, thanks to the work of small winegrowers, in recent decades Txakoli has gone from having a reputation as a simple, big-headed wine to winning competitions and gaining international recognition. One of the projects driving this change is Astobiza, a winery in the Ayala Valley (Álava) next to a stream, the Mahastondo, whose name means “good vineyard”. This is where Ana Martín Onzain and Pepe Hidalgo Togores, two great defenders of local produce, produce and present wines within the new Txakoli wave.

Astobiza Txakoli is a wine made with the Hondarrabi Zuri variety, a native grape that was planted between 1996 and 2004, in the southernmost area of the province of Alava, very close to the Cantabrian Sea. With a chalky soil, clayey texture and sufficient exposure, sustainable agriculture is practiced with a vegetative cover and no herbicides. The grapes are harvested by hand in small boxes and, once they reach the winery, a second selection takes place on the table. Fermentation is carried out at a controlled temperature and the wine is inertised, stabilised and microfiltered before bottling.

With a modern, balanced flavour, personality and a delicious fruity touch, wines like this Astobiza Txakolí are driving a transformation of this white wine variety where it moves on from the local bar to the world of haute cuisine. Undoubtedly, a new generation Txacolí
