In adulthood we are more demanding and selective and it is difficult to create new bonds. However, childhood friendships mark us forever, and if they last a long time, they are sure to last a lifetime. One of the most fruitful friendships in the world of wine is between Paul Marchand-Perarnau and Willy Roulendes, two friends who met as children and who, after a life dedicated to wine, decided to set up their own project together. So in 2014 AMI (friend in French) was born, a winery located in the Maranges Valley, south of the Côte de Beaune (Burgundy) where the talent of sommelier Paul and the experience of winemaker Willy create pure, lively and very pleasant wines.
An adventure that is going very well with wines like this AMI Bourgogne Aligoté. Made from certified organic vineyards in Pommard, these are vines of the Aligoté variety planted on very high limestone soils. They use organic agriculture with biodynamic treatments throughout and during the harvest Paul and Willy work with their friends to pick the grapes and select them by hand. When the fruit reaches the winery, the vinification process is carried out naturally, without any additives. Once the grapes have been pressed, the resulting must is fermented with native yeasts and without temperature control. This requires a high level of attention to detail because without temperature control there is no fixed formula and decisions must be made on a vintage by vintage basis. The wine is then aged in used French oak barrels and the wine is finally bottled without clarifying, filtering, or adding sulphites.
In a Burgundy where more and more people are jumping on the bandwagon of “labelled” natural winemaking, the two AMI founders want to champion authentic production without additives. The result is AMI Bourgogne Aligoté, a very small production from the AOC Bourgogne Aligoté, that is completely transparent and full of purity and minerality.

AMI Bourgogne Aligoté 2020 is a sculpted white wine with a pristine nose of white fruit and saline hints. On the palate, it is light, invigorating, and notably textured. This wine boasts a zesty acidity, replete with delightful citrus nuances and white pepper, culminating in a subtle mineral finish. |
